Description:
A “boneless split breast without rib meat” is produced by cutting a bone-in whole breast with ribs and tenderloins into two approximately equal portions along the center of the sternum. The rib meat and bones are removed. A boneless split breast without rib meat consists of one-half of a whole breast. The tenderloin may or may not be present.
